I know it is sort of cheating. But I did it anyway. I bought glutino frozen meals for lunch. hallelujah to convenience. I know I should be learning what meals I can cook and trying new foods, because, after all, I am going to be eating like this for a long time! But I have to say that I was getting sick of eating tomatoes and rice (the only gluten free foods in my house right now!) and I was HAPPY to try pad thai, and chicken ranchero. Yummmm.
Today will be devoted to learning and experimenting in order to make up for the frozen cheater meals I purchased - which cost waaay too much for the smallest portion known to man. I will make yet another trip to Trader Joes and Whole Foods and stand in the aisles until someone thinks I am lost (no, no I am not, I am just observing all the foods and reading labels). I am starting to feel at home at these stores, which could be unfortunate because the best gluten free foods I see there are desserts....
When I figure out how to post pictures I will show you what I find!

Aghhh, welcome to living gluten free..
So I have been baptized and welcomed into the world of living gluten free by being shoved completely under water without any warning. While somewhat cool and refreshing it is also hard to find my feet and stand up to get some air. I sat on the floor in the bookstore today with gluten free cookbooks, help guides, and reference materials spread all around me. People stepped around me as I tried to decipher what would be helpful and practical and which information simply wouldn't fit in to my world right now.
Before I went to the bookstore I cleaned out the pantry - I will show you the before and after pictures - which is now sadly empty. The shelves are bare and I was determined to find a book that would help me fill them up again. I realized that I didn't need the gluten free baking books or the ones that told me how to make my own bread - at least not yet. I didn't need the book that contained ingredients that were starred and listed as being available in specialty stores only - I was having a hard time finding food to eat as it is! I finally ended on a cookbook that contained both familiar ingredients and adventurous new choices and could actually be used on a daily basis (hello, I am NOT making bread every day!)
I also made my first batch of gluten free pasta today. Disappointing. I am not sure if I messed it up or if the brand wasn't that good. The once spiral shaped noodles had become thick and pasty, and went down without needing to be chewed. I ate one small bowl of the dough-like mass and watched the rest swirl around in the garbage disposal. Oh well, one attempt down, many more to come. The gluten free, one serving cheese cake went down just fine :)
